Sprats are little more than smoked sardines packed in a lightly aromatic oil, but that makes all the difference. Anyone who enjoys sardines is usually crazy about sprats. 

Among the best are the Smoked Baltic Sprats imported from Poland. Gently remove from the tin and arrange on serving dish, sprinkle with lemon juice and garnish with finely chopped onion or chives.

Or, decorate each sprat with a splotch of mayonnaise and insert a tiny wedge (1/8 of a slice) of peeled lemon into it.
